Cherry blossom sushi is very popular in Japan during spring, and includes cherry rolls with sea urchin and fried shrimp, cherry tuna sushi with salmon roe and cherry blossom albacore sushi, the most recommended local specialty of Japan's Okayama-ken. The rice of albacore sushi features the pink color of cherry blossoms and gives off a light flowery fragrance.
