Traveling south from Haikou to Wanning, a journey of one to two hours by train, seafood enthusiasts can savor steamed Hele crab, a specialty from Wanning's coastal Hele town. These lightly steamed crabs are accompanied by a ginger-vinegar dipping sauce that accentuates the natural sweetness of the crab meat.

For those who prefer red meat over seafood, the stewed Dongshan goat, another renowned dish from Wanning, comes highly recommended.

Dongshan Mountain is home to distinctive black goats that were once offered as tributes to the imperial palaces during the Song Dynasty (960-1279).

Preparing this high-quality meat is a simple process: blanching, stir-frying, and slow stewing, seasoned with just salt and white pepper. The result is a milky-white broth and tender, lean meat.
